Ingredients
  

  • 1/2 cup mayonnaise (choose a clean, avocado oil–based mayo if possible)
  • 3 tablespoons sugar-free ketchup
  • 2 tablespoons dill pickle relish (no sugar added), finely chopped
  • 1 tablespoon finely minced onion (or 1/2 teaspoon onion powder)
  • 2 teaspoons dill pickle juice (or white vinegar), to taste
  • 1 to 2 teaspoons granular erythritol or allulose (optional, to taste)
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon paprika (smoked or sweet)
  • Pinch of garlic powder
  • Pinch of salt and black pepper
  • 1 to 2 tablespoons heavy cream or unsweetened almond milk (optional, for thinning)

Method
 

  1. Prep your mix-ins: Finely chop the dill relish and onion so the dressing is smooth and spoonable. Smaller pieces mean better flavor distribution.
  2. Combine the base: In a medium bowl, whisk together the mayonnaise and sugar-free ketchup until fully blended and creamy.
  3. Add flavor: Stir in the relish, onion, pickle juice, sweetener (if using), Dijon mustard, paprika, garlic powder, salt, and pepper.
  4. Adjust texture: If you prefer a thinner dressing, whisk in heavy cream or almond milk a little at a time until you reach your desired consistency.
  5. Taste and tweak: Add more pickle juice for tang, more sweetener for balance, or extra paprika for warmth. Season with salt and pepper as needed.
  6. Chill: Cover and refrigerate for at least 30 minutes. Resting deepens the flavors and helps everything meld.
  7. Serve: Spoon it over salads, use it as a burger sauce, or serve as a dip with veggies or grilled shrimp.
