Ingredients
  

  • 1 cup fresh strawberries, hulled and chopped (plus extra slices for topping)
  • 1 cup heavy whipping cream (or coconut cream for dairy-free)
  • 2 ounces cream cheese, softened (optional, for extra thickness)
  • 2–3 tablespoons powdered erythritol or allulose (adjust to taste)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1 teaspoon lemon juice (optional, brightens the flavor)
  • 1 tablespoon chia seeds (optional, for thicker mousse or to make a parfait layer)
  • Fresh mint leaves for garnish (optional)

Method
 

  1. Prep the berries: Rinse, hull, and chop the strawberries. Set aside a few slices for garnish. If you like a smoother dessert, mash half the berries with a fork.
  2. Whip the cream: In a cold bowl, beat the heavy cream with a pinch of salt until soft peaks form. Don’t over-whip.
  3. Sweeten and flavor: Add powdered sweetener and vanilla to the cream. Beat to medium peaks. Taste and adjust sweetness.
  4. Optional cream cheese: If using, beat the softened cream cheese in a separate bowl until smooth. Fold it gently into the whipped cream.
  5. Add the berries: Fold the chopped (and optionally mashed) strawberries into the cream mixture. If you want a brighter flavor, fold in lemon juice.
  6. Thicken if desired: For a mousse-like texture or parfait layers, sprinkle in chia seeds and fold. Let it sit 5–10 minutes to thicken.
  7. Assemble and serve: Spoon into small bowls or glasses. Top with reserved strawberry slices and a mint leaf. Serve right away or chill for 30–60 minutes for a firmer set.
